Smoothie popsicles are a wonderful on the go treat to enjoy any time of day, including breakfast! The same method can be applied to your favorite green juice! How to Turn Green Juice into a Popsicle These green popsicles are the perfect combination of spicy and cool. They’re super refreshing and one of the easiest treats to make. Take a bottle of your favorite green juice and blend it with frozen fruit to thicken the texture. Pour into a popsicle mold and freeze. It’s a great way to extend the life of green juice. This is also a wonderful way to incorporate extra leafy greens into your diet. And, an excellent way to get your kids to enjoy their greens, as well! Note: I originally made these green popsicles in collaboration with The Chalkboard in 2014. Since then, the recipe has been adapted to use your favorite store-bought green juice or homemade green smoothie! Ingredients There are two ways to make these green juice popsicles: Use a bottle of your favorite store-bought green juice. I love the seasonal green blends at Pressed Juicery. Mix up your own homemade green juice using a juicer or blender. The original recipe used Pressed Juicery kale, romaine, spinach, yuzu, pink lady apple, cucumber, and jalapeno seasonal blend. I added fresh pineapple and mango to thicken the juice. The added fruits help to give the popsicles a little more texture and body. Make your own green juice by blending together one apple, a handful of kale, a handful of baby spinach, one cucumber, and juice from one citrus (be it lemon, lime, yuzu, or orange). Add one jalapeno for heat. Keep seeds intact for more spice, or remove seeds before adding to blender. Blend with about 1/2 cup of water until smooth. Then, run mixture through strainer to separate pulp. Recipe Variations There are many ways to customize this green juice popsicle recipe! Avocado Kale Smoothie: Rich and creamy green smoothie makes for a luscious green popsicle! This avocado kale smoothie blends together buttery avocado, frozen banana, baby kale, and fresh squeezed lime juice. Tropical Green Smoothie: Swap out the green juice for heartier ingredients. This tropical green smoothie combines baby spinach, banana, mango, pineapple, and coconut water. Blend together, pour into popsicle molds, and freeze. Recommended Equipment and Tools I personally use this popsicle mold from Amazon. It is very easy to clean and makes 10 frozen pops at a time. Pair the mold with standard disposable wooden sticks or try these reusable ice cream sticks. For a super versatile mold, I recommend these flexible silicone ice cream bar molds. I use this mold for these ruby chocolate strawberry swirl ice cream bars and these raspberry mango coconut pops. Or, simply use kitchen items you already have at home! Use large ice cube trays, small paper cups (like Dixie cups), or recycle used yogurt cups. Blend until smooth.Pour mixture into popsicle molds. Place filled molds in the freezer for 1 hour. Remove and insert wooden sticks into molds. Return mold to freezer and freezer for at least 4 hours, until firm. NotesHomemade blender green juice. Combine: 1 handful baby spinach, 1 handful baby kale, 1 cucumber, 1 green apple, juice from one lemon or one lime, with 1/2 cup water or 1/2 cup coconut water. Process until smooth. Strain out pulp.
