Artisanal Bites: Speciality Breads Recipes

Quick breads are raised with baking powder or baking soda. Yeast raised breads are leavened with yeast. This collection of speciality breads fall somewhere in between.

These recipes contain breads that share qualities of both quick bread and yeast breads. Some breads featured here are regional specialities like Green Onion Pancakes from Taiwan and Melon Pan from Japan. Bagels and pretzels are another example of specialty breads. These honey beer pretzels and everything pretzels are raised with yeast. Then, they are boiled in a baking soda solution before being baked in the oven.
