Blood Orange Margarita
Add a pop of vibrant color to the classic margarita with fresh squeezed blood orange juice! Blood oranges are in season in from December through April. Yield: serves one, multiply as needed

- 2 oz silver tequila
- ¾ oz orange cognac liqueur, like Cointreu or Grand Marnier
- 1 oz fresh squeezed blood orange juice
- ½ oz fresh squeezed lime juice
- ½ oz simple syrup*, or more according to your taste preferences
- coarse sea salt, to rim glasses
Moisten rim of serving glass with blood orange wedge (or lime). Invert serving glass into plate of coarse sea salt.
Fill shaker or mixing glass with ice. Add tequila, orange cognac, blood orange juice, lime, and simple syrup. Stir until mixture is chilled. Adjust sweetness according to preference.
Add ice salt rimmed glass. Strain cocktail over ice. Garnish with slice of blood orange and a sprig of lemon thyme, if desired. Serve and enjoy immediately.
Simple Syrup:
Boil equal parts water and sugar. Chill until ready to use. Keeps for one week in the fridge.

Pitcher Margarita (serves 12): Combine 24 oz silver tequila, 9 oz Cointreau, 12 oz blood orange juice, 6 oz lime juice, and 6 oz simple syrup. Cover and keep chilled in the fridge overnight. Don't push past 24 hours. Ideally, serve the mixed cocktail within 12 hours of mixing.
- When ready to serve, pour over ice. Each serving should be 4.75 oz. It may taste strong at first. However, the ice will melt into the cocktail mellowing it out a bit.
