Cucumber Margarita
A refreshing summertime margarita! This cucumber margarita recipe features cucumber agua fresca (agua fresca de pepino) and fresh lime juice. Make a serving for one or a large pitcher for a party!

Rim:
- honey, to coat glass rim
- coarse sea salt
Cocktail:
- 2 oz tequila of choice
- ½ oz Cointreau, or other orange liqueur such as Grand Marnier
- 2 oz cucumber agua fresca
- ½ oz lime juice
- ¼ oz simple syrup (optional, recipe follows)
Garnishes:
- mint leaves
- cucumber slices
- lime wedges or wheels
Moisten the rim of serving glass with honey. Invert glass onto a plate filled with coarse sea salt. Twist glass to ensure it is thoroughly coated.
Turn glass right side-up. Pour in tequila, orange liqueur, cucumber agua fresca, lime juice, and optional simple syrup. Stir to combine. Add ice.
Garnish with fresh mint, cucumber slices, and lime wedge. If desired, sprinkle a little lime zest on top of drink.
To make simple syrup: Bring to a boil equal parts water and granulated sugar. Reduce heat and simmer until sugar has dissolved. Remove from heat and cool to room temperature. Keep in a covered container in the fridge until ready to use.
Ingredient Notes:
- Blanco (white or silver) tequila will give you the bright, green cocktail color.
- Gold, resposado (rested) , and anejo (aged) tequila are darker in color. This will alter the final color of the cocktail.
- Simple syrup is optional. Cocktail will be less sweet if simple syrup is omitted.
- Agave syrup can be used in place of simple syrup.
