Shorten steel cut oatmeal cooking time! Prepare this the night before and wake up to a nutritious hot breakfast. Lightly sweeten oatmeal with honey and brown sugar. Enjoy with caramelized bananas and toasted pecans!
½cupsteel cut oatsalso called Irish oats or Scottish oats
½teaspoon fine sea saltor kosher salt
1Tablespoonhoneyor sweetener of choice
2Tablespoondark brown sugar

1mediumbananasliced
1Tablespoongranulated sugar
2Tablespoonstoasted pecansroughly chopped
Instructions
Bring water to a boil. Remove from heat. Stir in cup steel cut oats. Immediately cover and let mixture sit overnight.
In the morning, uncover pot. The mixture should be creamy and slightly thickened. Add salt, honey, and brown sugar. Stir and bring to a boil. Let boil for about 30 seconds then reduce heat and let simmer uncovered for 3-5 minutes stirring occasionally, until thickened.
Toppings
While oatmeal is heating, heat up a sauté pan. Sprinkle a little sugar. Wait for the sugar to get warm then place banana slices on top. Let sugar caramelize. Sprinkle sugar on top banana slices then flip. Allow other side to caramelize. Transfer caramelized bananas to small bowl.
Once oatmeal is to your desired consistency, ladle into serving bowls. Adjust sweetness adding more sugar or honey to taste. Sprinkle toasted pecans and caramelized bananas on top. Enjoy your healthy and satisfying breakfast.
Notes
Serve warm. Store leftovers in a covered container in the fridge for up to two days. Reheat before enjoy.
