Puff Pastry

Puff pastry is a laminated dough. It is used for for pastries and desserts such as palmiers, encased poached pears, and napoleons. There are several ways to make this dough from scratch. Traditionally, the dough is made similar to croissant dough, in which a block of butter is folded into yeast dough. Quick puff, also known as rough puff pastry or blitz puff, is a shortcut method made similar to biscuit dough. Palmiers are a great introductory recipe using this laminated dough. Another classic favorite are these poached pears wrapped in puff pastry shell.
