This tiramisu cold brew strikes the perfect balanceโ€” not too sweet and surprisingly well-crafted. While Iโ€™m typically underwhelmed by Disneyland Resortโ€™s coffee offerings, I canโ€™t resist trying each new flavor!

This one is a clear winner! And, it has become my second favorite, only to be topped by the cafe de olla cold brew from DCAโ€™s holiday food festival.

The tiramisu cold brew is currently available at Troubadour Tavern in Disneyland. This was released as part of the 70th anniversary seasonal menu offerings. The beverage is described as a โ€œdark chocolate cold brew with tiramisu topper and ladyfinger cookie.โ€

โ€œSeasonal offeringโ€ means โ€œlimited time.โ€ However, we have no idea how long this popular coffee will stay on the menu. Thatโ€™s why itโ€™s important to know how to make a homemade version! Now you can enjoy this coffee treat anytime you want.

Deconstructing the Original

Letโ€™s break down the components:

  • Dark Chocolate Cold Brew
  • Tiramisu Foam
  • Cocoa Powder Dusting
  • Ladyfinger Cookie

The cold brew was definitely sweetened. The foam topping was thick and substantial. Yet, it also dissolved into the cold brew when stirred. Adding the ladyfinger garnish was a great touch! It added next textural crunch to the beverage.

My Copycat Development Process

I interpret โ€œdark chocolate cold brewโ€ as cold brew coffee sweetened with dark chocolate syrup. I adapted Alton Brownโ€™s chocolate syrup recipe which worked beautifully!

Otherwise, feel free to use your choice of dark chocolate syrup. I found these store bought options: gourmet dark chocolate sauce and squeeze bottle chocolate sauce.

I had the most trouble figuring out how to make the tiramisu foam. It took nearly a one pound tub of mascarpone cheese to be satisfied with my results! At one point, I nearly gave up and wanted to simply buy this tiramisu milk foam powder!

After a week of daily testing, I nailed my copycat recipe. My tiramisu cold foam cream is a combination of heavy cream, milk, mascarpone cheese, powdered sugar, vanilla, salt, and my custom โ€œespresso blend mixture.โ€

The espresso mixture is made by mixing together instant espresso powder, brown sugar, and hot water. I recommend deLallo instant espresso powder, Nescafe espresso intense instant coffee, or 365 instant espresso sticks.

Easy peasy. Now let’s assemble everything together!

Customization

I tested this recipe with a variety of different cold brew options. Opt to make my cold brew coffee concentrate or my iced cold brew coffee recipe. For store-bought options, I recommend Stok un-sweet black cold brew or Chameleon Cold Brew. La Colombe is another good option.

Adjust the coffee sweetness to your liking. I like the ratio of 6 oz unsweetened cold brew to 1 Tablespoon dark chocolate syrup. Keep in mind that I prefer drinks less sweet. Add additional chocolate syrup or sweetener of choice depending on your preference.

Add as much or as little tiramisu foam as you want. The recipe listed below makes enough foam for two suggested servings.

Use your choice of cocoa powder for dusting. Serve the assembled tiramisu cold brew with a ladyfinger cookie! Make it from scratch or simply buy it. Supermarkets often sell multiple varieties, including an in-bakery made one.

Tiramisu Cold Brew

This is my homemade version of the popular Tiramisu Cold Brew from Disneylandโ€™s Troubadour Tavern. It combines dark chocolate cold brew with tiramisu cold foam cream and a dusting of cocoa powder. The dessert coffee drink is completed with a ladyfinger cookie garnish!

Ingredients

Sweetened Espresso Mixture:

Tiramisu Foam:

  • 4 oz heavy cream, cold
  • 4 oz milk, cold
  • 2 Tbsp mascarpone, cold
  • 1 Tbsp confectioners sugar
  • 1 teaspoon vanilla extract
  • pinch kosher salt
  • 1 Tbsp sweetened espresso mixture , or more to taste

Tiramisu Cold Brew:

  • 1 Tbsp homemade dark chocolate syrup, or store-bought
  • 6 oz cold brew, (homemade or store-bought)
  • tiramisu cold foam cream
  • unsweetened cocoa powder, as needed for dusting
  • ladyfinger, to garnish

Instructions 

Sweetened Espresso Mixture:

  • Pour hot water over instant espresso powder and brown sugar. Mix until powder and sugar has dissolved. Set aside.
    *This makes more than you need. Use leftovers to make an iced latte. See notes.

Tiramisu Foam:

  • Whisk together cream, milk, mascarpone, confectioners sugar, vanilla, salt, and 1 Tbsp sweetened espresso mixture until smooth. Taste, add more sweetened espresso mixture if desired. Beat or whisk together to almost stiff peaks.
    *This makes enough for two suggested servings.

Tiramisu Cold Brew Assembly:

  • Combine dark chocolate syrup and cold brew in serving glass.
  • Fill glass ยพ full with ice.
  • Spoon tiramisu foam mixture on top and spread into an even layer flush with the serving glass rim.
  • Generously dust cocoa powder on top. Garnish with a ladyfinger cookie position across the serving glass rim. Serve with a strain. Stir to blend flavors together or use the straw to customize each sip with your preferred layer combination.

Notes

  • Use leftover sweetened espresso mixture to make an iced latte. Fill serving glass with ice. Pour in remaining espresso mixture. Top with milk of your choice.ย 
  • Store leftover foam in a covered container in the fridge for up to three days.ย
