I have a serious soft spot for stuffed bread rolls. I’ve made birthday funfetti rolls, cookies and cream rolls (Oreo rolls), and coconut jam cinnamon rolls for the sweet tooth. For the savory side, there are cheddar scallion rolls and my “French onion soup” inspired caramelized onion gruyere rolls.

Ingredients & Substitutions

Ham: This recipe calls for Canadian bacon or sliced deli ham. It’s also great with sliced turkey, slice pastrami, sliced roast beef (basically any slice deli meat). Or, simply skip the meat and add more cheese.

Swiss cheese: Feel free to swap in gruyère, provolone, or havarti if you want a different melt and flavor. I’ve also made this cheddar and mozzarella.

Worcestershire sauce: This is the ingredient doing the heavy lifting in the sauce! It’s made from anchovy, vinegar, garlic, onion, and tamarind, and it’s what gives the sauce its deep, can’t-quite-place-it umami flavor. Don’t skip it.

Yeast: If you’re using instant yeast instead of active dry, skip the proofing step just mix it directly with the milk and egg, then proceed as directed.

How to Assemble

  1. Make the dough. Activate the yeast in warm milk, whisk in the egg, then mix in flour and salt. Add softened butter a tablespoon at a time until the dough is smooth and pulls away from the bowl. Let rise until doubled, about 60–75 minutes.

  1. Fill. Roll dough to 20×14-inch rectangle. Spread softened butter, layer on cheese and shingle ham on top. Season with black pepper.
  2. Roll. Roll dough into a log from the long side.
  3. Slice and proof. Cut dough into 12 even rolls and arrange in 9×13 inch baking pan. Cover and let rise until puffed, about 30-45 minutes.
  4. Make sauce. While the rolls proof, melt butter and sugar together. Add Worcestershire, dijon, garlic powder, onion powder, and black pepper. Let cool.

  1. Bake. Pour sauce generously over tops of risen rolls, sprinkle with everything seasoning. Bake in preheated oven until golden (about 35 minutes) and internal temp hits at least 185°F.
  2. Rest and serve. Let rolls cool in pan for about 8 minutes before running knife (or offset spatula) around the edges to loosen. Serve warm.

Tips for Success

  • Use sliced cheese : Whether it’s sliced Swiss or other cheese of your choice, sliced cheese just makes rolling the dough so much easier! It keeps the filling from sliding out. I use the slicer edge of this box grater when using cheese blocks.
  • Shingle the ham, don’t stack it. Overlapping slices distribute more evenly than one thick layer.
  • Use a thermometer. Bread rolls can look done on the outside before they’re fully baked through. 185°F internal temp is your best guide.
  • Don’t skip the rest after baking. Those few minutes let the sauce set slightly, so the rolls hold together when you pull them apart.

Storage & Make-Ahead

  • Room temperature: Freshly baked rolls are fine covered at room temp for up to 24 hours. Keep in the fridge after that time.
  • Fridge: Store leftovers in an airtight container for up to 3 days.
  • Freezer: Bake, cool completely, then wrap tightly in plastic and foil and freeze in an airtight bag for up to 6 weeks. Thaw, then reheat in a toaster oven or standard oven.

Make-ahead dough: Assemble the rolls in the pan, cover tightly, and refrigerate overnight. Let sit at room temperature for 30–45 minutes (or could be longer depending on your ambient temperature) to finish rising before baking as directed.

Reheating tip: Bread dries out fast in the microwave. Place a small glass of water in the microwave alongside the roll and heat for 30 seconds. the steam keeps it soft instead of tough.

Ingredients

Dough:

  • 227 g milk (whole or reduced fat 2%), (1 cup) heated to 110°F
  • 1 Tablespoon active dry yeast, * see notes instant yeast
  • 1 large egg, room temp
  • 520 g all-purpose flour (4 cups), (4 cups)
  • 2 teaspoons kosher salt, Diamond Crystal preferred
  • 85 g unsalted butter, (6 Tablespoons) softened

Filling:

  • 28 g unsalted butter, (2 Tbsp) softened
  • 227 g sliced Swiss cheese (8 oz), or cheese of choice
  • 170 g Canadian bacon slices (6 oz), or deli ham or deli turkey
  • fresh cracked black pepper, to season

Sauce:

  • 85 g unsalted butter, (6 Tbsp)
  • 25 g light brown sugar, (2 Tbsp) packed
  • 1 Tablespoon dijon mustard
  • 1 teaspoon worcestershire sauce
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper
  • everything seasoning mix, as needed for sprinkling

Instructions 

  • DOUGH: In the bowl of a stand mixer, combine yeast and warm milk. Stir together and let sit for 5-7 minutes to activate yeast. Whisk in egg until combined. 
  • In a large bowl, whisk together flour and salt. Attach dough hook attachment to stand mixer. With the mixer running on low speed, add flour mixture about one cup at a time. Once all the flour has beed added, add softened butter one tablespoon at a time. 
  • Increase mixer speed to medium and knead until dough is smooth and no longer sticks to the sides of the bowl, about 3 minutes. 
  • Transfer dough to a lightly greased large bowl. Cover bowl and let sit at room temperature for 60-75 minutes until dough has doubled in size. 
  • Punch down risen dough. Transfer to a lightly floured work surface and roll into a rectangle about 20 x 14-inch.
  • FILLING: Spread softened butter evenly over dough. Arrange sliced Swiss cheese over dough. Top with Canadian bacon slices. Season with freshly ground black pepper.
  • Starting at the long side, roll dough into a tight log. Place log seam side down on cutting board. Slice log into 12 equal portions. Place slices in a greased parchment lined 9×13-inch baking pan or casserole dish. Cover with plastic wrap and let rolls rise for 30-45 minutes at room temperature until the rolls have puffed up and are touching each other.
  • Meanwhile, preheat oven to 350°F and prepare sauce.
  • SAUCE: In a sauce pot, melt butter and sugar over medium heat. Once melted, add worcestershire sauce, dijon mustard, garlic powder, onion powder, and black pepper. Stir to combine. Remove from heat and allow to cool.
  • BAKE: Uncover risen rolls. Drizzle sauce over rolls. Top with everything seasoning mix. Bake for 33-35 minutes until the bread is golden and the internal temperature of rolls registers at least 185°F on an instant read kitchen thermometer. 
  • Let rolls sit in pan for 5-8 minutes until running a knife or mini offset spatula to loosen rolls from pan. Serve baked ham and Swiss rolls warm. 

Notes

  • If using INSTANT YEAST: Mix yeast, milk, egg together in stand mixer. No need to let yeast sit for 5 minutes. Add flour mixture and proceed with original instructions. 
  • Dough can be mixed by hand. Use a large bowl and sturdy spatula for mixing. Proceed by kneading dough by hand until dough is smooth and elastic. 
  • MAKE AHEAD: Dough can be prepared ahead of time. Follow steps leading up to plastic cut rolls in greased pan. Cover with plastic wrap and let chill in the fridge overnight. Before baking, allow rolls to sit at room temperature for 30-45 minutes til reactive yeast and allow rolls to rise. Bake as directed in instructions.

    I made this recipe a few days ago ; my husband loved it. I used vegemite in the sauce instead of worcestershire sauce and didn’t use garlic and onion powder nor everything seasoning mix.

      Bake and cool to room temperature. Tightly cover with plastic wrap or foil and place in an airtight bag. It will keep in the freezer for up to 6 weeks. Defrost and then warm up in a toaster oven or standard oven.
