Read our disclosure policy. These ultimate chocolate cupcakes are super decadent. It’s comprised of a dark chocolate cake with milk chocolate filling and whipped chocolate ganache topping. It is quite fitting that Valentine’s Day falls in the middle of Random Acts of Kindness Week. I am a firm believer in paying it forward. Too often, we wait for special days to remind us to do good, express gratitude or celebrate love. But why wait? We should strive to do that everyday, or at least try to. I once got a fortune cookie that said, “one kind word can warm three winter months.” Not your typical fortune, but definitely a great bit of wisdom that I keep tucked in my wallet to remind me to be good to others. Kindness is so powerful. In our fast paced and often selfish world, we find ourselves spectacle or even uneasy whenever someone does something nice for us. Sometimes its hard to believe that there are people out there that just do good for no reason at all. Ultimate Chocolate Cupcakes I strive to be like that, to do good without expecting or wanting anything in return. Its the little things that can make your day, week or month. So many little things you can do to warm others’ hearts. Be nice to strangers, you never know if they will end up being your friend. Leave a couple extra minutes on your parking meter for the next person. Open the door for the person with their hands full. During rush hour, allow the car that has been signaling to finally change lanes. I’m sure you know how good those feel when you’ve had a tough day. Better yet, bake someone cookies, brownies or cupcakes. Bake anything and share it. For me, its not officially Valentine’s Day until I’ve had a great deal of chocolate. Enjoy these super decadent chocolate cupcakes– dark chocolate cakes with milk chocolate filling and whipped chocolate ganache topping. Its the ultimate treat for any chocoholic. I added hearts cut out from red colored gum paste to make it a little more festive. You can easily omit it, or use fondant or sprinkles. Have an open heart today (and everyday). The world can never have too much kindness. I wish you a happy and loving Valentine’s day! Dark Chocolate Cupcakes with Milk Chocolate Filling These ultimate chocolate cupcakes are super decadent. Servings: 12 cupcakes Print Recipe Pin Recipe Rate Recipe IngredientsDark Chocolate Cupcakes:3.5 oz dark chocolate finely chopped⅓ cup unsweetened cocoa powder¾ cup strong coffee hot¾ cup bread flour¾ cup granulated sugar1 teaspoon fine sea salt1 teaspoon baking soda6 Tablespoons vegetable oil2 large eggs room temp2 teaspoons distilled white vinegar2 teaspoons vanilla extractMilk Chocolate Filling:2.5 oz milk chocolate finely chopped¾ cup heavy creamWhipped Dark Chocolate Ganache Frosting:5 oz dark chocolate finely chopped¾ cup heavy cream Instructions Dark Chocolate Cupcakes:Preheat oven to 350° F. Line cupcake tin with paper liners.Combine dark chocolate and cocoa powder in a large bowl. Pour hot coffee over mixture. Cover with plastic wrap and let sit for a couple minutes. Remove cover and whisk until smooth. Chill in the refrigerator for about 10 minutes.In a medium bowl whisk together flour, sugar, salt, and baking soda.Once chocolate mixture has cooled, whisk in oil, eggs, vinegar and vanilla. Fold in flour mixture. Divide batter between 12 cupcakes. Remove milk chocolate filling from fridge.Add a rounded teaspoon of milk chocolate filling on top of each cupcake. Bake for 17-20 minutes until cake is set. Let cool in pan for 3-5 minutes before unmolding and allowing to cool completely on wire racks.Milk Chocolate Filling:In a microwave safe bowl, combine milk chocolate and cream. Microwave for 30 seconds on half power. Stir. Repeat if chocolate is not melted. Whisk until smooth. Chill in the refrigerator while you prepare cupcakes. Do not leave in fridge for more than 30 minutes.Whipped Dark Chocolate Ganache Frosting: Place chopped chocolate in a medium bowl. Heat cream until simmering. Pour cream into chocolate and cover with plastic wrap. Let sit for 3-5 minutes. Remover cover and stir until ganache is homogeneous. Cover with plastic wrap (let plastic wrap touch chocolate to prevent condensation formation). Every 30 minutes stir. Let sit until ganache is pipeable consistency.Place ganache in bowl of stand mixer. Using a whisk attachment, whip on medium speed until ganache until airy and fluffy. Transfer to piping bag and decorate cooled cupcakes.
