Strawberry season is such an exciting time in the kitchen. There’s nothing like working with fresh strawberries at their peak! They’re plump, fragrant and bursting with natural sweetness. At this point, you can just eat them straight! But, it’s also the perfect time to use fresh strawberries to add that bright pop for flavor and color to desserts.
While frozen strawberries are a great year-round pantry staple (especially for smoothies and sauces), they’re not always the best option for baked goods.
Fresh strawberries hold their shape beautiful and have a firmer texture. Frozen strawberries have a much higher moisture content once thawed- this can make batters too wet or fillings too loose when you try to swap them in place of fresh strawberries.
