Try something fresh and exciting!Cucumber mint lemonade is slightly sweet, a little tart, and oh so refreshing. Cucumber mint lemonade is fresh, cooling, and so easy to make. Garnish with mint leaves and some sliced cucumbers to make the drink look even fancier. Ingredients You need three key ingredients to make this fabulous summertime libation: lemon, mint, and cucumbers. Use fresh ingredients for best results. Lemons: Fresh squeezed lemon juice tastes a hundred times better than any store-bought bottled lemon juice. It takes minimal effort to juice a lemon! Mint: Any variety of fresh mint works. Spearmint and peppermint are the most commonly available variety at supermarkets. Cucumbers: Persian cucumber, English cucumbers, or hot house cucumber works best. These varieties tend to have smaller seeds. Keep the cucumber skin on for extra cucumber flavor. I prefer to peel the cucumbers. The cucumber lemonade recipe also requires water and sweetener of choice. Recipe Variations This mint lemonade is perfect on it’s own. It also makes the perfect base for a cocktail! Add gin or vodka to turn into mocktail into a hard lemonade. Lemonade Cocktail: Combine 4 oz (1/2 cup) cucumber mint lemonade with 1.5 oz liquid of vodka or gin. Honey Whiskey Lemonade: This version combines spring thyme lemonade with Jack Daniel’s honey whiskey. Lemonade Margarita: Use this lemonade as a base for a refreshing margarita! Mix 4 oz (1/2 cup) lemonade with 2 oz tequila and 1/2 oz orange liqueur. You might also like this cucumber margarita or honey grapefruit margarita. Lemonade Simple Syrup Simple syrup is a liquid sweetener made by dissolving sugar in water. This liquid sweetener easily mixes into beverages of any temperature, be it iced or warm. Of course, you can just stir the sugar into the lemonade. However, I highly recommend you take the extra 5 minutes to make simple syrup. Simply combine equal parts sugar and water. Bring to a boil until sugar dissolves. Remove from heat and let cool slightly. For future reference, you can make all sorts of special simple syrups for your beverages such as this cinnamon syrup or spicy jalapeño syrup. How To Make Lemonade This lemonade is SUPER EASY to make, but it requires a blender. Lemon juice, sliced cucumbers, and fresh mint are processed together in a blender until smooth. Strain mixture through a fine mesh sieve or cheesecloth. Discard pulp. Alternatively, you may use a juicer (juice machine) to process whole lemons, whole cucumbers, and fresh mint. Combine simple syrup, cucumber juice mixture, and water (or chilled sparkling water). That’s it. Serve over ice and enjoy. Puree until smooth.Strain mixture through a fine strainer (or cheesecloth). Discard pulp.Pour lemonade into a pitcher. Add remaining 2 cups of water*. Stir to combine. Keep chilled until ready to serve. Notes Honey or agave syrup may be used in place of granulated sugar. You may sub in 2 cups chilled sparkling water in place of water in step 4.
