Transport yourself to a tropical paradise with these coconut mango popsicles. These frozen treats blend the sweet ripe mangos with creamy coconut milk.
Sweet, satisfying, and easy to make! These coconut mango popsicles are a great summer treat. Each refreshing bite captures the essence of my childhood summer spent in the Philippines.
Popsicles offer a lighter alternative to traditional desserts. They satisfy a sweet craving without the heaviness, making them perfect for warm weather! If you’re a fan of coconut mango and want something richer, try mango coconut sheet cake or Filipino fruit salad!
Ingredients
- Mango blended with fruit juice
- Coconut milk blended with sugar and yogurt
Mango and coconut are two very distinct flavors that manage to balance each other quite well. Instead of mixing the mango and coconut together into a swirled popsicle (like my strawberry pineapple pops), I thought it would be better to separate them into distinct layers.
This recipe works well with either fresh or frozen mango. I highly recommend seeking out Philippine mangoes, also known as Manila mangoes. Manila mangoes are distinctively sweeter in flavor with less of a fibrous texture.
In contrast, the Tommy Atkins and Kent mango varieties typically sold at US supermarkets are more stringy and fibrous, more tangy in flavor, and generally less sweet. In this case, opt for frozen mango chunks which are frozen at their peak ripeness. You’ll likely have a better tasting experience!
Choose to blend the the mangoes with pineapple juice or mango juice. If you want it really sweet- opt for apple juice.
For the creamiest experience, use full-fat unsweetened canned coconut milk. Pick a brand that lists coconut within the first two ingredients. Mix the coconut milk with sweetener of your choice and yogurt.

I personally use thisย popsicle moldย from Amazon. Iโve had mine for well over a decade. It is very easy to clean and makes 10 frozen pops at a time.ย Use standard disposable wooden sticks or try theseย reusable ice cream sticks.ย
Don’t have popsicle molds? Try these three alternatives using items you might have around the house:
- Small paper cups: Fill 3-5 oz paper cups, cover with foil, and poke a stick through the center.
- Ice cube trays: Make little bite-sized pops. Cover tray with foil and insert toothpick before freezing.
- Yogurt containers: Pour mixture into clean yogurt cups, cover with foil and freeze with stick inserted in center.
You will need a blender to puree the mango. Countertop blender, food processor, or a small hand blender works great. It is best to process the fruits until smooth.ย

Layering the distinct flavors creates a visually appealing popsicle! Plus, it allow you appreciate the two flavors separately and together. You may opt for a swirled appearance like this strawberry pineapple popsicle or lava flow popsicles.
And of course, you can choose to switch up the tropical flavors! Swap out the mango for fresh or frozen pineapple chunks, kiwi, strawberries, or avocado. Yes, avocado paired with coconut milk is such a delicious treat. These coconut avocado popsicles are proof of that!

Mango provides a very clean, refreshing flavor, while coconut milk provides these popsicles with a sweet rich and nutty contrast. Having the two flavors layered lets to enjoy them both equally.
I guess when I’m feeling bogged down and stressed from all the emails and work that have piled up, I’ll just have to step outside with a coconut mango popsicle in hand and take a breather.
Coconut Mango Popsicles
Ingredients
Mango Puree:
- 2 ยฝ cups mango chunks, fresh or frozen
- ยฝ cup pineapple juice, or mango juice
Coconut Puree:
- 1 cup canned coconut milk, full-fat, unsweetened
- 2 Tablespoons granulated sugar, or choice of sweetener
- 2 Tablespoons yogurt
- 2 Tablespoons water
Instructions
- In a blender or food processor, puree mango chunks and pineapple juice until smooth. Transfer to a bowl and set aside.
- In another bowl, combine coconut milk, sugar, yogurt, and water. Stir until homogenous.
- Pour 2 Tbsp of mango puree into each popsicle mold. Place in freezer for 15 minutes until almost solid.
- Remove mold from freezer, add 1 Tbsp coconut puree to molds. Place in freezer for 10 minutes. Add 1 Tbsp mango puree. Insert wooden sticks into popsicle mold. Freeze for another 10 minutes. Pour remaining coconut puree into molds until liquid reaches the top of the mold.
- Return mold in the freezer. Freeze for at least 4 hours to fully set.
- To remove popsicles from mold, submerge mold into room temperature water for 60-90 seconds. Remove from water and pull popsicles out. Enjoy immediately!
Notes
- Highly recommend using Philippine or Manila mangos. Ataulfo (honey mangoes) and Champagne mangoes are the next best option. Otherwise, if you can only find the standard Atkins or Kent variety, use frozen mango chunks!ย ย
- Popsicles keep well in the freezer for up to two weeks. Overtime, they absorb the flavors of the freezer.ย
