As a result, this drink is on the menu all weekend long. This sparkling cucumber mint gin is the ideal cocktail to sip outside during these hot summer nights as you wait for the sun to set and the sky to turn orange. Sparkling Cucumber Mint Gin Gin and Tonic is a classic cocktail for good reason. It’s clean, crisp, and refreshing. Let’s amplify those qualities to create the most inviting light summer cocktail! The kick to this gin cocktail is mint syrup. Simple syrup is made by combining equal parts sugar and water. Simple syrup is the ideal base for adding flavors to mixed drinks, coffees, and teas. Steep fresh herbs, dried spices, or fruits in simple syrup to extract flavor. Fresh Mint Syrup To make mint syrup, bring 1 cup water and 1 cup sugar along with a handful of torn mint leaves to a boil. It is important to tear or bruise the mint leaves. This will help to release the oil within the mint leaves. Reheat the hot sugar syrup from heat. Cover and steep mint for about 30 minutes. Cool to room temperature and store in the fridge until ready to use. Garnish with sliced cucumber and sliced lime. Top glass with ice. Add additional mint syrup, according to taste if desired. Serve immediately. Notes*Mint syrup: Bring to a boil 1 cup water, 1 cup sugar, and a handful of torn mint leaves. Remove from heat, cover pot, and allow mint to steep for 30 minutes. Strain mint and store mint syrup in the fridge until ready to use.
