These mini green velvet donuts are a festive St. Patrick’s Day take on the red velvet cake.

In honor of Saint Patrick’s Day I decided to whip up a quick batch of something green and festive.
I read somewhere that originally the color blue was associated with Saint Patrick. He used the three leafed shamrock to explain the Holy Trinity to non-believers.ย Eventually over time, shamrocks and the color green became synonymous with the Irish holiday.
Rather than drinking pints of alcohol, I’ll be partaking in the consumption of a lot of green sugar. I’ll be including these delicious little green velvet donuts to my weekend plans.
Ingredients
The batter follows a classic red velvet cake recipe. However, instead of red dye, it is tinted green for St. Patrick’s Day.
Use food gel coloring instead of the standard liquid food coloring. Food gel coloring is a thicker, more concentrated food coloring that results in brighter, more vibrant colors. A little amount goes a long way! I recommend using AmeriColor, Chefmaster or Wilton.
To further enhance the green, garnish the frosted donuts with green sanding sugar or green sprinkles.
If you prefer to naturally color these donuts green, consider making matcha donuts.

To make these baked donuts, you will need: nonstick mini donut bakeware pans and a piping bag.
Mini Donut Bakeware
- There are a variety of different donut pans available. I recommend using theseย non-stick mini donut pansย photographed above.ย
- They are easy to clean and easy to use. Even though they are nonstick, I still suggest brushing them with melted butter or coating with baking spray before use.ย
Piping Bag
- Fill donut pans using a piping bag fitted with a small round tip. Alternatively, use a plastic zip-top bag with a corner snipped off.

Green Velvet Donuts
Ingredients
Green Velvet Donuts:
- 1 cup all-purpose flour, (130 g)
- 1 ยฝ cup cake flour, (180 g)
- 2 Tablespoons Dutch-processed cocoa powder, (11 g)
- 1 Tablespoon baking powder, (12 g)
- ยฝ teaspoon baking soda
- ยฝ teaspoon kosher salt, or fine sea salt
- 1 cup buttermilk, (227 g) room temp
- 1 Tablespoon distilled white vinegar
- 2 teaspoons vanilla extract
- 1 cup unsalted butter, (227 g) softened, room temp
- 1 ยฝ cups granulated sugar, (300 g)
- 2 large large, room temp
- green food gel paste*, as needed for desired color
Cream Cheese Glaze:
- 3 oz cream cheese, room temp
- 2 Tablespoon unsalted butter, (28 g) softened, room temp
- ยผ cup confectioners' sugar, (30 g)
- 2 Tablespoon whole milk
- ยฝ teaspoon vanilla extract
Instructions
Green Velvet Donuts:
- Preheat oven to 350โ. Grease mini donut pans and set aside.
- Whisk together flour, cake flour, cocoa powder, baking soda, and salt. Sift cake flour and cocoa powder if clumpy Set aside.
- Whisk together buttermilk, vinegar, and vanilla in another bowl. Set aside.
- Cream butter and sugar in a bowl of stand mixer fitted with a paddle attachment until pale and fluffy. Add eggs one at a time, beating well after each addition.
- On low speed, add dry mixture in three additions, alternating with wet ingredients. Add desired amount of green food gel paste. After all ingredients have been added, continue to mix until batter is smooth.
- Transfer batter to piping bag with small tip. Fill donut pans a little less than โ full. ย Do not overfill.
- Bake for 10-15 minutes until donut springs back when touched. Let cool in pan for 2 minutes before unmolding.
Cream Cheese Glaze:
- Cream together cream cheese and butter until well combined. Add confectioners' sugar milk, and vanilla. Beat until smooth. ย *Add more sugar to have thicker glaze, add more milk for thinner glaze.
- Dip donuts into glaze. Decorate with green sprinkles. Let sit until glaze sets.
