Are you too cheap to turn on the air-conditioner? Same here. I hate seeing my electricity bill skyrocket during the summer. Instead, I try to combat the heat with lots and lots of frozen treats. This recipe only requires three ingredients: strawberries, sugar, and lemon. Use of lemon juice and lemon zest helps to enhance the flavor of the strawberries. The acidity adds a pop of bright fresh notes. It is best to use super ripe fresh strawberries. That way, you don’t have to add too much sugar. How to Make Fruit Popsicles Place all ingredients in a blender or food processor. Process until smooth. Pour blended liquid into molds (or desired containers). Insert wooden sticks or reusable sticks into molds. Freeze for at least 4 hours until popsicles are solid and firm. Recommended Popsicle Tools I highly recommend this popsicle mold. (It’s the one photographed above.) It is easy to fill and easy to clean. These stainless steel molds are also great. However, you need to purchase two sets to make a dozen popsicles. For a super versatile mold, I recommend these flexible silicone ice cream bar molds. I use this mold for these ruby chocolate strawberry swirl ice cream bars and these raspberry mango coconut pops. You may also use items you already have at home like ice cube trays, small paper cups (like Dixie cups), or recycle used yogurt cups! More Summer Frozen Recipes Take advantage of summer’s bounty. Arnhild says: June 3, 2013 These look so delicious, and easy to make! I have one question. In step one, where you say to leave the strawberries until the have expelled juice, do you mean for one to discard the juice, or blend all of it together? Reply
Maryanne says: June 3, 2013 Combine the strawberries with the sugar and wait for strawberries to juice. Then blend everything together.
Karen says: June 4, 2013 Summer just got a whole lot better! I can’t wait to try these. I’m tempted to even splurge on a juicer – the carrot orange part looks so good. Thanks! Reply
Maryanne says: June 4, 2013 Thanks, Karen! Packaged juices work great too. I really like Naked Juice’s products because they are just as fresh as juicing it yourself!
